New Recipe: Apple Cinnamon Muffins

Want a balabustes secret? Always keep a batch of these in your freezer! I enjoy serving these on the cold winter Shabbosim with some warm apple cider! Mhmmm!!
6 eggs
2 cups sugar
2 cups flour
1 cup oil
1 Tablespoon vanilla sugar
1 tablespoon cinnamon
2 apples, peeled and finely diced
2 teaspoons baking powder
Juice of half of a lemon
1: Preheat your oven to three hundred fifty degree. In a large bowl, combine all the ingredients. Mix well until there are no more lumps.
2: Pour your batter in to muffin tins that have been lined with cupcake paper and bake for thirty minutes.
Note: These muffins freeze very well. To defrost simply keep in a room temperature area.
