Culinary Corner: Hassleback Carrots

Here’s a delicious and vibrant side dish
to add to your rotation! It looks beautiful on the plate and you can use tri-colored carrots to further brighten the dish!
6-8 carrots, peeled
1/4 cup oil
3 tablespoons honey
2 teaspoons salt
1 teaspoon lemon juice
1/2 teaspoon cinnamon
1/8 teaspoon black pepper
Fresh thyme (optional)
1: Cut small slits all the way up the
carrot while being careful not to cut all the way through
2: Combine the rest of the ingredients and whisk until combined
3: Place the carrots in a pan and coat with the sauce. Top with some thyme (optional) Bake at 400 degrees for about an hour
