Culinary Corner: Harissa Roasted Gnocchi

As winter creeps up at us and the temp drops, this warm, inviting dish will definitely do the trick. This easy-to-make, hearty dish won’t take you more than 15 minutes to prepare.

Roasted Gnocchi
Ingredients:
1 package gnocchi, uncooked
1-pint grape tomatoes halved
Small shallot, sliced
1 can chickpeas, optional
4 T olive oil
1-3 T harissa, depending on how spicy you
like it
1 tsp garlic powder
Salt and pepper to taste
Directions:
1. Preheat
the oven to °425.
2. In
a 9x13 pan, combine gnocchi, grape tomatoes, shallots, and chickpeas, if using.
3. In
a small bowl, combine oil, harissa, garlic powder, salt, and pepper. Mix, and
pour over gnocchi. Mix all together well, making sure gnocchi is well coated
with the oil-harissa mixture.
4. Bake
for 45 minutes, stirring once after 20 minutes. Broil for the last 5 minutes,
for added crispiness. Enjoy!
