Culinary Corner: Garlic Herb Smashed Potatoes

Soft on the inside, nice and crispy on the outside. These smashed potatoes make a delicious and fun side dish!

20 mini Yukon gold potatoes 
1/2 cup oil
2 cubes frozen garlic
2 cubes frozen parsley
1 cube frozen basil
2 teaspoons salt
1/2 teaspoon black pepper

1: Combine all the ingredients besides the potatoes in a small bowl and mix until incorporated 
2: Add the potatoes to a pot filled with bubbling water and boil for fifteen minutes
3: Strain the potatoes and spread out on a baking sheet. Place an additional baking sheet on top of the potatoes and press down to smash the potatoes. If you don’t have a real baking sheet to smash the potatoes use any hard and flat item
