Culinary Corner: Eggplant Triple Tower

This dish was compiled, out of complete desperation to create an appetizer one day. It was one of those days. I stood in my kitchen, opening and closing the fridge and removing random items. Brainstorming and trying to concoct some creative combination that will work.

The results??! An epic hit of a dish, that’s a gourmet and gorgeous appetizer for any Yomtov meal! This is a tasty tower, combining 3 different flavors and textures, and dripping with flavor.

EGGPLANT TRIPLE TOWER

yields: 8 servings

Ingredients:
1 eggplant, unpeeled, sliced (approx. 16 slices)
3 eggs, beaten
2 cups panko crumbs
oil, for frying
1 16 oz. Kosher Salami, sliced into 1/2" thick slices (8 slices)
Hunt's Bbq sauce

Soy Rice:
1 cup rice
1 Tbsp. oil
1 Tbsp. Soy Sauce
1 tsp. teriyaki sauce
1/2 tsp. salt
1/4 tsp. black pepper
2 cups boiling water

For rice, Preheat oven to 350. In a 5x7" pan, combine all ingredients and bake covered @ 350 for 1 hour. 
Heat skillet with canola oil and fry slices of pastrami.

For eggplant, Dip eggplant slices in beaten egg, followed by panko crumbs. Then again in the egg and again in the panko crumbs. In oil fry each eggplant slice till golden and crumbs crunchy. Drain on paper-towel lined plate. 

To Assemble, place eggplant slice, then a bit of rice, fried salami slice, more rice and cover the whole tower with a second eggplant slice. Finish it off with a shpritz of bbq sauce.
